Thai Chicken Sauté

PREP TIME: 20 MINUTES 

COOK TIME: 40 MINUTES

MAKES: 4 SERVINGS


Ingredients

1 cup rice (brown, jasmine, basmati, white)

2 tablespoons coconut oil

1 bunch organic broccoli, florets & stems cut into pieces

1 organic yellow bell pepper diced

2 cups organic cherry tomatoes, halved

1 cup organic shiitake mushrooms, sliced

1/2 organic yellow onion diced

2 boneless chicken breasts, cut into chunks

1 teaspoon red-pepper flakes

½ cup Lime Miso Dressing



Lime Miso Dressing


2 tablespoons miso

1/4 cup of fresh lime juice

2 tablespoons sesame tahini

1/4 cup of water

1/4 cup grape seed oil



Directions


Cook the rice of your choice according to package directions.

Heat 1 tablespoon of the coconut oil over medium heat in a skillet. 

Add in the broccoli, bell pepper, tomatoes, and mushrooms and cook 10-15 mins 

Remove the vegetables and add the remaining tablespoon of coconut oil to the skillet. 

Add in the chicken. Cook for 7 minutes or until done. 

Add the vegetables back into the skillet and toss in the pepper flakes and dressing until well blended. Serve with the rice.
