Ingredients
1¼ cup sprouted spelt flour or whole spelt flour
½ teaspoon aluminum-free baking powder
¾ cup almond meal
2 eggs, yolks and whites separated
¼ cup extra virgin olive oil or melted extra virgin coconut oil
Zest of 1 organic orange
½ cup fresh orange juice
¾ cup almond milk
3 tablespoons brown rice syrup
Extra virgin coconut oil or melted butter for
brushing the waffle iron
Directions
Preheat your waffle iron. Sift spelt flour and baking powder into a medium mixing bowl. Add almond meal and stir breaking up any lumps.
In a separate bowl, whisk egg yolks, olive oil, orange zest, orange juice, and almond milk until combined.
Combine the wet & dry mixture; add rice syrup into the batter and stir again. In a clean bowl, beat egg whites into stiff peaks and gently fold into batter.
Brush preheated waffle iron with melted butter or oil.
Add about ½ cup batter per waffle cook for about 4 minutes or until golden brown.
Top with:
Yogurt
Fresh organic berries
Maple syrup
