Ingredients
1¼ pounds organic red potatoes, cut into quarters
1½ tablespoons organic fresh parsley, minced
1 teaspoon lemon zest from an organic lemon
1 teaspoon cold pressed olive oil
Instructions
Put the cut up potatoes into a pot with water & bring to a boil. Reduce the heat and cook for 7 to 10 minutes, or until tender. Drain.
Mix together the parsley, lemon zest, and oil. Drizzle over the warm potatoes.
