2 pounds organic rhubarb, trimmed and sliced in ½-inch pieces (about 5 cups)
7 cups filtered water
¼ cup dried organic rosebuds
½ cup fresh organic mint leaves Raw honey to taste
Place rhubarb and water in a large pot. Bring to a boil.
Cover & reduce heat to low, Simmer for 20 minutes.
Remove from heat, add rosebuds and mint. Steep for 5 minutes. Strain into a bowl or large heatproof jar, and add honey to taste.
Store in the fridge for up to a week.
