Makes 2 servings
2 tablespoons chia seeds
1½ cups almond milk
3 large organic peaches - pitted
1 tablespoon coconut butter or extra virgin coconut oil
1 teaspoon vanilla extract
1/8 teaspoon cinnamon
2 to 3 teaspoons raw honey, optional
Place chia seeds in a clean, dry, 1-quart jar with a tight-fitting lid and set aside.
Add almond milk, peaches, coconut butter, vanilla, cinnamon, and honey a blender.
Blend until completely smooth.
Pour the mixture into a jar with chia seeds, tighten lid, and shake well.
Place in the fridge and chill for 2 hours or overnight.
