Lentil Soup

Ingredients 


8 Cups of vegetable broth

3 Large organic carrots - peeled & cut to your size preference 

2 Ribs organic celery

1/4 Organic fennel bulb - chopped

3 Organic garlic cloves minced

1 1/2 Cups red lentils (rinsed)

1/3 Cup quinoa

2 Tablespoons of tomato paste

2 Bay leaves



Directions


Add all ingredients to a pot. Bring to a boil on high heat. Cover and bring heat down to low.

Cook for 30 minutes or until the lentils are tender.



**Lentils are a great source of iron, zinc, selenium, & folate**
