Buffalo Chicken Chili

Ingredients 


1 Tablespoon Olive Oil

2lb Organic ground chicken

2 Large organic carrots

4 Stalks organic celery

1 Organic red bell pepper

6 Cloves organic garlic

3/4 of an organic yellow onion

5 Tbsp organic chili powder

1 Tbsp organic ground coriander

1 Tbsp organic smoked paprika

1/2 Cup Franks Red Hot sauce

2 (15 oz) cans organic tomato sauce

1 (15 oz)  can organic tomato

2 (15 oz) cans organic mixed beans


Instructions


Dice 3/4 of an onion

Chop celery, carrots, & red bell pepper

Heat olive oil in a large pot. Add in ground chicken and diced onion.

Cook for about 10 minutes or until chicken is fully cooked. 


In a chopper- add the can of diced tomatoes, chopped carrots, red bell pepper, garlic, & celery.

Add this to the chicken mixture.

Add in the 2 cans of tomato sauce, 2 cans of mixed beans, seasonings, and hot sauce.

Simmer on low for 1 hour.


Pour into bowls and serve!


Can be served over rice with pumpkin seeds (my personal favorite) 


Additional toppings:


  • Shredded Cheddar Cheese
  • Sour Cream
  • Chopped Green Onions
  • Diced Avocado
  • Fresh Cilantro
  • Sliced Jalapeños
  • Diced Red Onion
  • Pickled Red Onions
  • Black Olives
  • Guacamole
  • Chopped Fresh Herbs (like parsley or chives)
